Glossary of Ingredients
Welcome to the glossary page of our 3ABN Recipe corner. This is a page where you can contribute to make vegetarian cooking easier for others. We welcome your input and insights as we convert the North American terms into Australian and New Zealand language. - Agar Agar
- A natural vegetable gelatin made from red algae. Used as a replacement for animal gelatine in some recipes. A natural laxative.
- Almond Butter
- Made from soaked, ground raw almonds. Can be used to replace peanut butter. Make your own or buy from a health food store. Other nuts can be used to make nut butters as well.
- Bell Peppers
- Capsicum
- Better Than Milk
- non dairy/non animal milk substitute eg. Soy, Rice , Nut.
- Bragg’s Liquid Aminos
- unfermented soy sauce. Sold as Braggs All Purpose Seasoning in local health food shops.
- Carob Powder
- Made from ground carob beans. High in goodness, caffeine free so is a good replacement for chocolate powder or cocoa which do contain caffeine. Dark carob powder has a bitter taste while light is sweeter and gives a better flavour in sweet recipes.
- Cilantro
- Also called Chinese Parsley or Coriander
- Coffee Substitutes
- Made from Cereals such as barley instead of coffee beans so is caffeine free. eg. Ecco, Caro, Nature’s Cuppa.
- Cornmeal
- Made from milled corn or maize. Also known as Polenta.
- Emes Unflavoured Gelatin
- Non animal gelatin.
- Flaxseed
- Linseed
- Florida Crystals
- Pure cane sugar containing no preservatives or additives with no animal products used during processing. An alternative to white sugar which is usually bleached using animal by products.
- Fructose
- Sugar obtained from fruit. Found in Health Food Stores.
- Nutritional Yeast
- Savoury Yeast Flakes. Found in Health Food Stores and some supermarkets.
- Pimentos
- A type of red pepper (chilli shape). Red capsicum can be used as an alternative.
- Scallions
- Onions with a small bulb. eg. Spring onions, shallots, leek.
- Sucanat
- Sweetener, an alternative to sugar.
- Tahini
- Hulled and milled sesame seeds.
- Tamari
- Wheat free, naturally fermented, unpasteurized soy sauce.
- Tofutti Cream Cheese
- Non animal cream cheese. Available in Coles Supermarkets along with another brand - King Land Soy Cream Cheese. Tofutti sliced soy cheese is also available from the supermarkets and comes in different flavours.
- Vegenaise
- Natural mayonnaise free of egg, dairy and refined sweetener.
